Our Story

Two friends, one delicious idea.

Truffles N Bacon® started with Chef Jackie Lim and Magnolia Magat — best friends who shared a stubborn belief that food should be fun, generous, and a little bit daring. In February 2014 they opened a 30-seat cafe tucked inside a Las Vegas Antique Market. Word got out fast. Within a year they outgrew the space and moved to their current home on South Eastern Avenue, where an open kitchen has been turning out American comfort food with a Filipino soul ever since.

The dream behind the door

Magnolia grew up in a family of entrepreneurs in the Philippines and learned early to work with pride, whatever the job. A move to the U.S. and years in retail and customer service sharpened her instinct for hospitality — but the dream of her own little cafe, right down to the hardwood floors, never left her. Chef Jackie is self-taught, with an artist’s hand and a career that carried her from a small Modesto diner to kitchens in Los Angeles and New York. Her intercontinental, Asian-inspired cooking is where the magic happens — she’s the mind behind the smoky-sweet bacon jam that put Truffles N Bacon® on the map.

Why we cook the way we do

We have one simple rule: no rules. Breakfast at 3 PM? Mac n cheese before noon? Go for it. We love taking something familiar and waking it up — bacon jam and tomato compote on a humble sandwich, ube where you’d least expect it, a burger you’ll be talking about for weeks. Some of our most-loved dishes started as ideas from regulars who didn’t want to be boxed in by a menu. That spirit — playful, bold, a little extra — is on every plate.

What we’re known for

Chef Jackie’s award-winning bacon jam. The Belly of the Beast — our 10.5-lb burger that’s been featured on Food Network’s Ginormous Foods. Ube French toast, Sinful Tots, and a Mac n Cheese lineup worth the drive across the valley. Familiar comfort, turned all the way up.

A part of the neighborhood

More than a decade in, we’ve become part of the community we set out to feed. We’ve watched babies grow into teenagers, celebrated milestones with regulars, and even been part of a few weddings. With 68,000 friends following along and a whole city of locals who simply call us TNB, this is still exactly what we set out to build: a home for happy, hungry people.

Our journey has been anything but ordinary. Through every step, we've focused on staying true to our values and making space for thoughtful, lasting work.
